Approximate months for all of Italy: they change with the region and the year. The real month is stated on every batch, and what has yet to arrive can be bought on pre-order, with the delivery date on the product page.
Oil
In the field: October, November, and December. Reaches your home: November, December, and January.
Olives are picked from October to December in almost every region: in Sicily it starts as early as September, in Calabria it runs into December. The new oil comes out between November and January, often unfiltered: cloudy, more pungent and bitter in the first months.

Cured meats
In the field: January and February. Reaches your home: March and April.
Pork is processed in the cold months, traditionally in January and February. A salami cures for four weeks to two months, so the new cured meats arrive in spring.

Cheeses
In the field: June, July, August, and September. Reaches your home: September, October, and November.
Cows go up to the mountain pastures between late May and mid-June and stay there until the end of September. The cheese made up there comes down to the valley to mature, and arrives in autumn.

Vegetables in oil
In the field: March, April, July, August, and September. Reaches your home: May and October.
Artichokes are picked until April; aubergines and peppers from June to October. The jar rests a few weeks before it ships.

Pasta
In the field: June and July. Reaches your home: September and October.
Wheat is harvested between late June and mid-August, first in the South and then in the North. Pasta made with the new wheat arrives after the summer.

Preserves

Tomatoes are picked and processed in summer: in 2025 the season ran from early July to early October. New passata and peeled tomatoes arrive as early as August.

Honey
In the field: April, May, June, July, and August. Reaches your home: May, June, July, August, and September.
Honey is extracted from April, with citrus in the South, until August, with chestnut, wildflower and honeydew. From November to March the bees overwinter and no honey is extracted: the honey you find in winter is from the summer.
